Long, ribbon-thin fish cut across the bone into thick steaks, each one showing a band of pale pinkish-white flesh ringed by fine silver skin. The cut keeps the bone in, which is what holds the meat together - this fish is far too delicate to fillet. The flavour is clean and gently sweet, with none of the heaviness of oily fish. Pan-fry the steaks in a little oil until the edges crisp, or braise them in a shallow sauce.
